Tasty side dish that goes perfectly with grilled steak.
Crush 3 cloves of garlic and mix in balsamic vinegar, olive oil, seasoned salt and oregano.
Clean the mushrooms, cut off the stems and scrape out the gills from the underside.
Place mushrooms on a plate and brush both sides of each mushroom with the vinegar mixture
place the mushrooms on a grill and grill on both sides until soft and cooked through. Remove from grill and place on oven safe plate or cookie tray covered with foil.
In a large saute pan, place 2 tsp olive oil and heat. Crush 2 cloves of garlic and place in the oil on medium heat. Cook until softened but not brown. Add the spinach and continue to mix so that all sides of the spinach are exposed to the oil. Cook down the spinach until it is completely wilted. Add salt and pepper to taste.
Turn on the broiler.
Spoon the spinach mixture into the cap of each mushroom. Sprinkle blue cheese on top.
Place mushrooms under the broiler and heat until the blue cheese melts and starts to brown on top.
