Soba noodles with soy mushrooms

Ingredients

  • 2 tbsp soy sauce
  • 1 tsp Muscovado sugar
  • portabellini mushrooms
  • 4 small spring onions, finely chopped
  • 2 tsp lime,wedges
  • 2 tsp fresh lime, juiced
  • 2 tsp sesame oil
  • 250 g soba noodles

Cooking Instructions

  1. Preheat the oven to 200°C.
  2. Mix soya sauce and muscavado sugar with a handful of portobellini mushrooms.
  3. Transfer to a baking tray and roast for 30 minutes, or until the sauce has thickened into a glaze and the mushrooms are soft.
  4. Blitz chopped spring onions, lime zest, the juice of 1 lime and a drizzle of sesame oil, then toss the vinaigrette with cooked soba noodles and arrange the mushrooms on top.
  5. Drizzle with the remaining soya glaze and serve.
